  • 2 medium sweet potatoes
  • 2 Honeycrisp or Gala apples
  • 4 cups vegetable stock
  • 1 cup organic heavy cream
  • 12 cups mild cheddar cheese, shredded
  • 1/2 red onion, chopped
  • 4 garlic cloves, minced
  • 2 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp cayenne pepper
  • 1 cup raw pecans, chopped
  • 1/2 cup organic rolled oats
  • 2 Tbsp raw honey, organic
  • 1 Tbsp organic all-purpose flour
  • 23 Tbsps unsalted butter, softened at room temp.

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes; toss with olive oil, cinnamon, and nutmeg. Roast for about 25 minutes until tender.
  2. In a large pot over medium heat, sauté red onion until translucent. Add minced garlic and cook until fragrant.
  3. Add roasted sweet potatoes and sliced apples to the pot; pour in vegetable stock and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in heavy cream and shredded cheddar cheese until melted through. Adjust seasoning as needed.
  6. Serve topped with a crunchy pecan-oat mixture.
