  • 45 lb beef shoulder roast
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons neutral oil
  • 2 tablespoons dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm apples, peeled and cut into wedges
  • kosher salt
  • freshly cracked black pepper

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Trim excess fat from the beef shoulder roast and season generously with salt and pepper.
  3. Heat oil in a Dutch oven over medium-high heat. Sear beef on all sides until browned (about 4-5 minutes per side).
  4. In a bowl, whisk together apple cider, chicken stock, dijon mustard, and dehydrated minced onion.
  5. Pour braising liquid over the beef in the pot. Add garlic head and herb bundle.
  6. Cover tightly and braise in the oven for approximately 3 hours until tender (check at 2.5 hours for boneless cuts).
  7. Add thick slices of red onion and apple wedges during the last 30-45 minutes of cooking.
  8. Let rest for 30 minutes before serving.
