  • 2½ cups all-purpose flour
  • 2 teaspoons apple pie spice or pumpkin spice
  • 1¼ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons apple cider (not reduced)
  • ¾ cup granulated sugar for coating
  • 2 teaspoons ground cinnamon for coating
  • 1 cup powdered sugar for glaze
  • ½ teaspoon vanilla extract for glaze
  • 12 tablespoons apple cider (not reduced) for glaze

Instructions

  1. 1. Pour the apple cider into a small saucepan and heat over medium-high heat until it gently boils or simmers. Cook until reduced down to ¼ cup, about 15-20 minutes. Remove from heat and let cool.
  2. 2. In another saucepan, melt 20 tablespoons of unsalted butter on low heat until foaming. Whisk frequently until it smells nutty; remove when lightly browned bits appear. Transfer to a heat-safe bowl to cool for about 15 minutes at room temperature.
  3. 3. In a separate bowl, whisk together flour, baking powder, baking soda, cornstarch, spices, and salt until combined.
  4. 4. In a mixing bowl, combine cooled brown butter with light brown sugar and granulated sugar until well mixed. Add egg, egg yolk, reduced apple cider, and vanilla extract; whisk until smooth.
  5. 5. Gradually stir dry ingredients into wet ingredients until just combined. Allow dough to rest while preheating your oven to 375°F (190°C).
  6. 6. Line a baking sheet with parchment paper. Using a cookie scoop, place dough balls on the sheet about 3 inches apart. Bake for 9-11 minutes or until edges are set and centers are slightly puffed.
  7. 7. Let cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  8. 8. Whisk together melted butter and un-reduced apple cider in one bowl; set aside. In another bowl, mix granulated sugar with ground cinnamon.
  9. 9. Brush each cookie top and sides with apple cider butter. Press into cinnamon sugar mixture on both sides before transferring back to the cooling rack.
  10. 10. Whisk powdered sugar with vanilla extract and enough apple cider until smooth; drizzle glaze over cooled cookies before serving.
