  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Wrap a 9-inch springform pan in foil, greasing lightly.
  3. Combine graham crumbs, brown sugar, cinnamon, and melted butter; press into the bottom of the pan.
  4. Peel and slice apples, mixing with brown sugar and cinnamon; layer over crust.
  5. In a bowl, beat cream cheese, granulated sugar, brown sugar, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth; pour over apples.
  6. Prepare a water bath by placing the springform pan in a larger baking dish filled with boiling water.
  7. Bake for 50-60 minutes until set but slightly jiggly in the center.
  8. Allow cooling gradually before chilling for at least four hours.
