  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, and sliced into 1/8" thick slices)
  • 690 g cream cheese (softened to room temperature)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs (room temperature)
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g all-purpose flour

Instructions

  1. Preheat your oven to 175°C (350°F). In a mixing bowl, combine the crushed biscoff cookies with melted butter until fully coated. Press the mixture evenly into the bottom of a springform pan to form the crust. Bake for 10 minutes then set aside to cool.
  2. In another bowl, mix melted butter, all-purpose flour, brown sugar, and rolled oats until crumbly. Set aside while you prepare the apple filling.
  3. Combine sliced apples in a bowl with brown sugar, ground cinnamon, and cornstarch. Toss until apples are well coated.
  4. In a mixing bowl, blend softened cream cheese and granulated sugar until smooth using an electric mixer. Add Greek yogurt, vanilla extract, ground cinnamon, ginger, nutmeg, and mix until combined. Add eggs one at a time while mixing until just incorporated; avoid overmixing.
  5. Pour half of the cheesecake filling over the cooled crust. Layer half of the apple mixture on top followed by remaining cheesecake filling. Top with remaining apple slices and streusel topping. Bake in preheated oven for approximately 70-85 minutes or until set in center; it may jiggle slightly.
  6. Let cool at room temperature before refrigerating for at least 4 hours or overnight for best results. Slice and serve chilled for an unforgettable dessert experience!
