  • 8 g light brown soft sugar
  • 17 g plain flour
  • 1/8 tsp ground cinnamon
  • 175 g unsalted butter or baking spread (softened)
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp mixed spice
  • 175 g unsalted butter (softened)
  • 350 g icing sugar
  • 1 1/2 tsp ground cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with light brown sugar, cornflour, cinnamon, and mixed spice until soft. Let cool.
  2. Make the crumble topping by mixing flour, brown sugar, and cinnamon with butter until crumbly, then bake until golden.
  3. For the cupcake batter, cream softened butter and light brown sugar before adding eggs one at a time and gradually mixing in self-raising flour and spices.
  4. Bake the cupcakes until golden brown, cool completely, then fill with the apple mixture.
  5. Frost with buttercream made from whipped butter, icing sugar, cinnamon, and milk. Top with remaining apple filling and crumble.
