  • lemon juice from one small lemon
  • 184 grams unsalted butter (browned)
  • 100 grams dark brown sugar
  • 100 grams granulated sugar
  • 2 teaspoons vanilla bean paste or extract
  • 1 egg (room temperature)
  • 1 egg yolk (room temperature)
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 5 grams cornstarch
  • 66 grams granulated sugar for coating
  • 1 tablespoon ground cinnamon for coating

Instructions

  1. Prepare the Caramelized Apples: Dice gala apples and toss with dark brown sugar, cinnamon, salt, and lemon juice. Cook on low-medium heat for 10 minutes until caramelized. Cool in the fridge.
  2. Brown the Butter: Melt unsalted butter over medium heat until golden brown with milk solids forming. Cool for 10 minutes.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, salt, and cornstarch.
  4. Combine Wet Ingredients: Whisk cooled brown butter with sugars and vanilla; add eggs and mix well. Gently fold in cooled apples.
  5. Form the Dough: Combine dry and wet ingredients, cover tightly, and chill dough for 2-3 hours.
  6. Bake Cookies: Preheat oven to 350°F. Coat dough balls in cinnamon sugar and bake for 12-14 minutes until edges are set.
