Ingredients

Scale
  • 3 cups all-purpose flour or bread flour
  • ½ tablespoon kosher salt
  • ¼ ounce instant or active dry yeast (or 2 ¼ teaspoons)
  • 1 ½ cups warm water (105°F)

Instructions

  1. In a large mixing bowl, combine the flour, salt, and yeast until well mixed.
  2. Pour warm water over the mixture and stir until fully incorporated; the dough should be sticky.
  3. Cover the bowl with a towel or plastic wrap and let it rise at room temperature for 2 to 10 hours (overnight is best).
  4. Once risen, wet your hands and gently transfer the dough onto a floured surface. Shape it into a round loaf or divide into smaller loaves.
  5. Place the shaped dough on parchment paper, dust with flour, score with a knife, and let rest for another 20-30 minutes.
  6. Preheat your oven to 450°F with a baking stone inside.
  7. Slide the dough onto the hot surface and add one cup of hot water or five ice cubes to create steam.
  8. Bake for 25-30 minutes until golden brown.
  9. Cool on a rack for at least 30 minutes before slicing.
