  • 6 strips thick-cut turkey bacon (or beef)
  • 1 lb medium pasta shells
  • 1/4 cup butter
  • 2 large yellow onions
  • 1 tablespoon olive oil
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, shredded

Instructions

  1. Slice the onions into even ¼-inch pieces. In a medium skillet, heat butter and olive oil over medium heat; add onions and caramelize for 40-50 minutes.
  2. Cut turkey bacon into thirds and cook in a large skillet over low heat until crispy; remove bacon and reserve drippings.
  3. Boil salted water in a pot; cook pasta according to package instructions until al dente; drain.
  4. In the same skillet with reserved drippings, whisk flour over medium heat for about 2 minutes. Gradually add heavy cream and milk while stirring to avoid lumps.
  5. Incorporate mustard powder, thyme, garlic powder, and hot sauce; bring to boil then reduce to simmer.
  6. Stir in cheeses until melted. Mix in caramelized onions and drained pasta.
  7. Chop bacon into pieces and mix in or sprinkle on top before serving.
