  • 2 medium-sized baguettes or 4 large crusty rolls
  • 68 slices turkey bacon
  • 8 large eggs
  • 1/4 cup whole milk
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 2 cups fresh spinach
  • 1/2 medium yellow onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of red pepper flakes, optional
  • 2 tablespoons olive oil for brushing

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Slice off the top third of each bread piece and scoop out the soft interior to create boats.
  3. Brush the insides with olive oil and optionally pre-bake for 5-7 minutes.
  4. Sauté chopped onion and bell peppers in olive oil until softened; add garlic and spinach until wilted.
  5. In a bowl, whisk together eggs, milk, cheeses, herbs, salt, and pepper.
  6. Mix sautéed vegetables with crumbled turkey bacon and fill each bread boat with the mixture.
  7. Pour egg mixture on top of the filling until almost full.
  8. Bake for 20-30 minutes until golden brown and set. Let cool slightly before serving.
