  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. In a bowl, mix ricotta, Parmesan, garlic, Italian seasoning, salt, pepper, and half the basil.
  4. Cut pockets in each chicken breast and stuff with the ricotta mixture; secure with toothpicks if needed.
  5. Place in the baking dish and cover with marinara sauce and mozzarella cheese.
  6. Bake for 25-30 minutes or until chicken is cooked through and juices run clear.
  7. Let rest for 5 minutes before serving and garnish with remaining basil.
