  • 3/4 cup butter, softened
  • 2 1/8 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups buttermilk
  • 1/2 cup butter, softened for frosting
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla for frosting
  • 3 1/2 cups icing sugar

Instructions

  1. Preheat the oven to 275°F (135°C) and grease a 9 x 13-inch baking pan.
  2. In a small bowl, mix mashed bananas with lemon juice and set aside.
  3. Combine flour, baking soda, and salt in a medium bowl.
  4. Cream together softened butter and sugar in a large bowl until light and fluffy.
  5. Beat in eggs one at a time followed by vanilla extract.
  6. Gradually add the flour mixture alternating with buttermilk until well combined; gently fold in the banana mixture.
  7. Pour batter into the prepared pan and bake for about one hour or until a toothpick comes out clean.
  8. Cool the cake properly before frosting it with cream cheese frosting.
