  • 2 pints cherry or grape tomatoes
  • 1 zucchini (sliced)
  • 1/2 sweet onion (diced)
  • 4 cloves garlic
  • 1/2 cup olive oil
  • 1 block feta cheese (drained)
  • 1 pound pasta
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 1/4 cup fresh basil
  • 1/4 cup parmesan cheese, grated

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine cherry tomatoes, zucchini, diced onion, minced garlic, olive oil, garlic powder, crushed red pepper flakes, kosher salt, and black pepper. Toss until well coated.
  3. Transfer the mixture to a baking dish and place the block of feta cheese in the center. Drizzle additional olive oil on top if desired.
