  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin medallions. Arrange them in a baking dish.
  3. In a medium saucepan over medium heat, combine unsalted butter, brown sugar, water, spices, and salt. Stir until melted and well mixed.
  4. Brush about three-quarters of the sauce onto the sweet potato medallions. Cover with foil and bake for 45-50 minutes.
  5. Remove the foil and drizzle the remaining sauce over the medallions. Top with chopped pecans and mini vegan marshmallows.
  6. Broil for 1-2 minutes until the marshmallows are toasted; watch closely to prevent burning.
  7. Allow cooling for 10-15 minutes before serving.
