  • 3/4 cup Biscoff cookie butter
  • 1/2 cup light or dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 metal baking pan with parchment paper.
  2. In a mixing bowl, whisk together brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
  3. Melt the unsalted butter and semi-sweet chocolate chips together until smooth; stir in cocoa powder. Combine this with the egg mixture.
  4. Fold in flour, espresso powder, and salt until just mixed.
  5. Pour half the brownie batter into the prepared pan; place frozen cookie butter layer on top, then spread remaining batter over it.
  6. Top with broken Biscoff cookies and drizzle extra warm cookie butter on top.
  7. Bake for 30-40 minutes or until a toothpick comes out with a few moist crumbs. Allow cooling before cutting.
