  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cream cheese filling by mixing cold cream cheese with sugar and vanilla until smooth. Chill in the refrigerator.
  2. Preheat the oven to 350°F (175°C). In a bowl, cream together softened butter and sugars until fluffy. Add egg yolks one at a time and mix in vanilla.
  3. In another bowl, combine flour, black cocoa powder, baking powder, salt, and additional sugar. Gradually add dry ingredients to the wet mixture.
  4. Scoop cookie dough, flatten slightly in your palm, place a teaspoon of cream cheese filling in the center, seal the dough around it, and roll into a ball.
  5. Bake on a parchment-lined baking sheet for 12-15 minutes until slightly puffed but soft in the center.
