  • 150 g Bourbon biscuits
  • 45 g unsalted butter, melted
  • 300 g soft cream cheese
  • 150 ml double cream (heavy cream)
  • 60 g caster sugar
  • 410 g black cherry fruit filling (tinned)
  • 150 g blackberries
  • 125 g blueberries
  • Zest and juice of 1 lime
  • 60 g dark chocolate (for garnish)

Instructions

  1. For the base, crush the Bourbon biscuits into fine crumbs and mix with melted butter. Press firmly into a tart pan and refrigerate for 30 minutes.
  2. For the cheesecake filling, beat cream cheese with caster sugar until smooth. Gradually whisk in double cream until thickened. Spoon over the chilled base and return to fridge for at least 4 hours.
  3. Prepare the topping by mixing black cherry filling with fresh berries, lime zest, and juice. Spread evenly on top of the set cheesecake.
  4. Garnish with dark chocolate shavings before serving.
