  • 1011 strips chicken bacon (cooked)
  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup sunflower seeds (roasted and salted)
  • 1 cup cheddar cheese (shredded)
  • 1/3 cup chopped red onion (or more to taste)
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Place chicken bacon strips on a baking sheet and bake for 15-20 minutes until crispy. Let cool and chop into bite-sized pieces.
  2. In a large mixing bowl, whisk together 1 & 1/4 cups Miracle Whip or mayonnaise, zest from 1 lemon, 1 tablespoon lemon juice, 2 tablespoons white grape juice vinegar, 1/4 cup sugar, 1 & 1/4 teaspoons kosher salt, 1/2 teaspoon black pepper, 1/4 teaspoon dry mustard, and 1/8 teaspoon cayenne pepper until smooth.
  3. Chop broccoli into small florets and add them along with dried cranberries, sunflower seeds, cheddar cheese, and most of the chicken bacon to the bowl with the dressing. Stir gently until well combined.
  4. Serve immediately or chill in the refrigerator for at least 20 minutes before serving to enhance flavors.
