  • 1 kg sweet potatoes, peeled and cut into 2-cm pieces
  • Extra-virgin olive oil
  • 1 kg chicken thigh fillets (boneless, skinless)
  • 1 tbsp smoked paprika
  • 1 tbsp dried mixed herbs
  • 1 tbsp garlic granules
  • ½ tbsp chilli powder (or cayenne pepper for extra heat)
  • ½ tbsp ground cumin
  • ½ tbsp onion granules

Instructions

  1. Preheat your oven to 220℃ (fan 200℃). In a small bowl, combine the spices.
  2. In a large bowl, toss diced sweet potatoes with olive oil, salt, pepper, and half of the spice mix.
  3. Spread sweet potatoes on a greased baking tray and roast for 35-40 minutes until tender.
  4. In the same bowl, coat chicken thighs with olive oil, remaining spices, salt, and pepper.
  5. Add chicken to another greased tray after the sweet potatoes have roasted for 15 minutes. Cook for an additional 20-25 minutes until done.
  6. Assemble bowls by layering sweet potatoes and chicken, adding any extra toppings you like.
