  • 8 oz unsalted butter (1 cup), room temperature
  • 4 oz cream cheese (1/2 cup), room temperature
  • 10 oz granulated sugar (1.33 cups)
  • 1 large egg yolk
  • 2 tsp peppermint extract
  • 1/2 tsp salt
  • 16 oz all-purpose flour (3.5 cups)
  • Red gel food coloring

Instructions

  1. In a stand mixer, cream the butter until smooth. Add cream cheese and mix until combined; then add sugar and mix on medium speed.
  2. Incorporate the egg yolk, peppermint extract, and salt until fully blended.
  3. Gradually add flour on low speed until just combined.
  4. Split dough in half; color one half with red gel food coloring until vibrant.
  5. Roll each color between parchment paper into long rectangles about ¼” thick.
  6. Chill the rectangles for 10 minutes, stack them together, then roll gently to meld colors into a thicker rectangle.
  7. Refrigerate wrapped dough for about 45 minutes before cutting into strips.
  8. Shape strips into candy canes by twisting them gently before baking at 350°F for 12-14 minutes.
