  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press evenly into the bottom of the prepared pan.
  3. Beat softened cream cheese with an electric mixer until smooth; add granulated sugar, eggs one at a time, and vanilla extract until well combined.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg in a separate bowl.
  5. Pour cheesecake filling over the crust, layer apple mixture on top, then sprinkle crumble topping over apples.
  6. Bake for about 45 minutes until set; cool completely before cutting into bars.
