  • 1 pound Lean Ground Turkey (93/7 or 99/1)
  • 1 medium Yellow Onion, chopped
  • 23 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper (or Zucchini), chopped
  • 4 cups Cauliflower Rice (fresh or frozen)
  • 1 (14.5 ounce) can Diced Tomatoes, undrained
  • 1/2 cup Chicken Broth (or Vegetable Broth)
  • Soy Sauce (or Tamari/Coconut Aminos)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for about 4-5 minutes until softened. Stir in minced garlic and cook for an additional minute.
  2. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink (approximately 7-10 minutes). Drain any excess fat if necessary.
  3. Mix in the red and green bell peppers (or zucchini), smoked paprika, cumin, oregano, red pepper flakes, salt, and pepper. Cook for another 5-7 minutes until the peppers soften.
  4. Stir in the diced tomatoes and tomato paste; then pour in chicken broth. Bring to a simmer and cover the skillet for about 10-15 minutes.
  5. Prepare cauliflower rice according to package directions while the turkey mixture simmers.
  6. Combine everything by stirring the cauliflower rice into the turkey mixture or serving it separately.
