  • 1/4 cup shredded cheddar cheese (reduced-fat if desired)
  • 8 slices white whole grain bread
  • Butter (for spreading)
  • 2 cups arugula

Instructions

  1. Preheat your oven to 450°F.
  2. In a medium bowl, combine pumpkin, cheddar cheese, salt, chili powder, and paprika until well mixed.
  3. Butter one side of each slice of bread.
  4. On a baking sheet, place four slices butter side down. Spread half of the pumpkin mixture on these slices and top with arugula. Add the rest of the pumpkin mixture before covering with the remaining bread slices (butter side up).
