Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup fresh or thawed frozen cherries, pitted and halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts generously with salt, pepper, and dried thyme on both sides.
  2. In a medium saucepan, combine cherries, balsamic vinegar, honey, and minced garlic. Cook over medium heat until cherries soften and the mixture reduces to a glossy glaze (8-10 minutes).
  3. Heat a grill pan or heavy skillet over medium-high heat until hot.
  4. Add seasoned chicken to the pan and cook for 6-7 minutes on one side without moving them. Flip and cook for another 6-7 minutes until internal temperature reaches 165°F.
  5. Brush the glaze onto the chicken during the last 2-3 minutes of cooking.
  6. Remove from heat and let rest for 3 minutes before serving. Garnish with chopped parsley.
