  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1 cup grated parmesan cheese
  • 1/4 cup neutral oil (vegetable or smooth olive oil)
  • 1 large head romaine lettuce (chopped small)
  • 1 cup croutons
  • 1/2 cup Caesar dressing
  • 4 extra-large burrito wraps

Instructions

  1. Slice chicken breasts in half widthwise and pound each piece to 1/4 inch thick.
  2. Set up a breading station with three bowls: mix flour with salt and pepper in the first bowl; whisk eggs in the second; combine panko breadcrumbs and parmesan in the third.
  3. Dredge each chicken piece in flour, dip into eggs, then press into the breadcrumb mixture until fully coated.
  4. Heat oil in a large saucepan over medium-high heat; fry chicken for 4-5 minutes on each side until golden brown. Drain on paper towels.
  5. In a large bowl, toss chopped romaine, croutons, shredded parmesan, and Caesar dressing until well combined.

  7. Place the filling onto a burrito wrap, fold tightly, cut in half diagonally, and serve immediately.
