  • 1 lb chicken breast or thighs, cut into chunks
  • 4 cloves garlic, minced
  • 3 tbsp butter, divided
  • 1 tbsp olive oil
  • 1/2 tsp red pepper flakes
  • 1 tbsp chopped parsley
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1 cup uncooked long-grain white rice or jasmine
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice (optional)

Instructions

  1. Season chicken with salt and black pepper.
  2. In a skillet, heat olive oil and 1.5 tbsp butter; sear chicken until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, melt remaining butter; sauté garlic until fragrant. Add red pepper flakes and parsley; simmer for 2 minutes.
  4. Return chicken to the skillet; coat in sauce and simmer for an additional 2–3 minutes.
  5. In a saucepan, bring chicken broth and milk/cream to a simmer; add rice; cover and cook according to package instructions.
  6. Once cooked, stir in Parmesan cheese until creamy. Serve chicken over rice.
