  • Ground beef
  • Turkey strips
  • Carrots, roughly chopped
  • Celery, roughly chopped
  • Onion, roughly chopped
  • Basil pesto ricotta
  • 24 ounces shredded low-moisture mozzarella cheese
  • 12 ounces Italian cheese blend
  • Crushed tomatoes
  • Tomato paste
  • Low-sodium chicken broth
  • Olive oil
  • Fresh rosemary
  • Fresh thyme
  • Bay leaves
  • Kosher salt and ground black pepper
  • Ricotta cheese
  • Large eggs
  • Grated parmesan

Instructions

  1. Preheat the oven to 375°F.
  2. Prepare the soffritto by pulsing carrots, celery, and onion in a food processor until finely chopped.
  3. Cook the soffritto mixture in olive oil until fragrant.
  4. Brown the ground beef and turkey strips in the pot; add tomato paste and cook briefly.
  5. Stir in vinegar, herbs, crushed tomatoes, and broth; simmer for about 90 minutes.
  6. Mix ricotta with basil pesto and seasonings.
  7. Assemble lasagna by layering bolognese sauce, no-boil noodles, ricotta mixture, and cheeses.
  8. Cover and refrigerate assembled lasagna for several hours or overnight.
  9. Bake covered for one hour; uncover for the last ten minutes to brown cheese.
