  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat your oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the base of a 9-inch springform pan.
  2. For the cinnamon roll layer, mix softened butter, brown sugar, and cinnamon until smooth, then spread over the crust.
  3. In a large bowl, beat softened cream cheese until creamy. Gradually add sugar, then incorporate eggs one at a time. Stir in vanilla extract and sour cream until smooth. Add brown sugar and cinnamon; mix well.
  4. Pour the cheesecake filling over the cinnamon layer and smooth out. Bake for 55 minutes or until set around the edges but slightly jiggly in the center.
  5. Allow cooling before refrigerating for at least four hours or overnight. Beat together frosting ingredients until smooth and spread on top before serving.
