  • 1 ½ cups boiling water
  • 20 ounces crushed pineapple (juice included)
  • 1 (15-ounce) can whole cranberry sauce
  • 1 cup chopped pecans (divided)
  • ¾ cup cranberry or apple juice
  • 8 ounces cream cheese (softened)
  • ½ cup powdered sugar
  • 1 cup sour cream

Instructions

  1. In a mixing bowl, combine boiling water with cherry Jell-O and stir until dissolved. Add crushed pineapple and whole cranberry sauce; mix well.
  2. Pour into a serving dish and refrigerate for at least 4 hours until set.
  3. For the topping, beat softened cream cheese with powdered sugar until smooth. Fold in sour cream and juice until blended.
  4. Once the Jell-O has set, spread the creamy topping over it and sprinkle with remaining pecans.
