  • 2 tbsp unsalted butter
  • ½ cup onion (finely chopped)
  • ½ cup celery (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp lemon juice
  • Fresh thyme

Instructions

  1. In a large pot over medium heat, melt the butter. Sauté the onions, celery, and garlic for about 3–4 minutes until softened.
  2. Stir in the tomato paste, Old Bay seasoning, salt, black pepper, and optional cayenne pepper; cook for another minute.
  3. Sprinkle in flour while stirring continuously for about 1 minute to form a roux.
  4. Gradually add chicken broth while stirring constantly; bring to a simmer for about 10 minutes until thickened.
  5. Reduce heat and stir in heavy cream, lemon juice, and thyme; simmer gently for an additional 5 minutes.
  6. Gently fold in the lump crab meat and cook until heated through.
  7. Adjust seasoning if necessary before serving hot with your choice of sides.
