  • 1 tablespoon olive oil
  • 400g (approx. 1 lb) ground chicken or turkey sausage, without casings and chopped
  • 1 medium onion, finely chopped
  • 1 medium carrot, chopped
  • 2 celery stalks, chopped
  • 2 large garlic cloves, finely chopped
  • 1 teaspoon Italian herbs
  • 1/4 teaspoon red pepper flakes
  • 75 ml fruit juice (about 1/3 cup)
  • 1 litre chicken broth (4 cups)
  • 150 ml heavy cream (around 3/4 cup)
  • 500g gnocchi
  • A handful of fresh spinach leaves
  • 30g (about 1/4 cup) freshly grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; sauté until softened (about 5 minutes). Stir in garlic, Italian herbs, and red pepper flakes; cook until fragrant (1 minute).
  2. Add ground sausage; cook until browned (6–8 minutes), breaking it up as you go.
  3. Pour in fruit juice to deglaze the pot; simmer for 2 minutes before adding chicken broth. Bring to a gentle boil.
  4. Stir in gnocchi and cook according to package instructions (3–5 minutes). Add heavy cream and mix until well combined.
  5. Fold in fresh spinach until wilted, then garnish with grated Parmesan cheese.
