  • 2 tbsp butter
  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained

Instructions

  1. In a skillet, melt butter over medium heat. Add chicken strips, season with salt and pepper, and cook until browned (5–7 minutes). Remove and set aside.
  2. In the same skillet, sauté diced onion and garlic until translucent (3–4 minutes), then stir in sliced roasted red peppers.
  3. Add chicken stock (or vegetable broth) while scraping the pan for flavor. Gradually stir in heavy cream (or coconut cream) and mix in parmesan cheese and Italian seasoning until smooth.
  4. Return chicken to skillet along with pepperoncini. Stir to coat evenly and simmer for 5 more minutes.
  5. Serve over rice or pasta for a hearty meal.
