  • 5 pounds Yukon gold potatoes
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour (or gluten-free blend)
  • 1 cup heavy cream (or half and half)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a medium-sized ceramic baking dish.
  2. Thinly slice the potatoes using a mandolin or sharp knife to about 1/16th inch thick.
  3. In a large pot over medium heat, melt the butter with minced garlic until fragrant. Stir in the flour to create a roux and cook for about 1-2 minutes.
  4. Gradually whisk in the heavy cream until thickened (about 5 minutes). Mix in Parmesan cheese (if using), thyme, salt, and pepper.
  5. Remove sauce from heat and let cool slightly. In a large bowl, combine sliced potatoes with the sauce until evenly coated.
  6. Stack potato slices upright in the baking dish and pour any remaining sauce on top. Sprinkle additional Parmesan if desired.
  7. Cover with foil and bake for 30 minutes; remove foil and bake another 30 minutes until golden brown.
