  • 1 pint fresh blueberries
  • 1/4 cup white sugar
  • Juice of 1 lemon
  • 8 slices sourdough bread (1/4 inch thick)
  • 4 oz grated white cheddar cheese
  • 4 oz shredded whole mozzarella cheese
  • 4 tbsp butter
  • Flaky sea salt for finishing

Instructions

  1. In a mixing bowl, combine fresh blueberries, sugar, and lemon juice. Gently mash until slightly broken down but still chunky.
  2. On one slice of sourdough bread, layer half the white cheddar followed by half the mozzarella. Add a spoonful of blueberry mixture and top with more cheese before finishing with another slice of bread.
  3. Heat a non-stick skillet over medium heat and melt 2 tablespoons of butter. Cook each assembled sandwich for about 3-4 minutes on each side until golden brown and crispy.
  4. Remove from heat, sprinkle with flaky sea salt, slice in half, and serve warm.
