  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Corn tortillas
  • Oil for frying
  • Cilantro and diced onion for garnish

Instructions

  1. Soak dried chilies in hot water for 15 minutes. Blend with onion, garlic, and tomatoes until smooth.
  2. In a slow cooker, add the beef and pour the chili mixture over it. Add broth, vinegar, oregano, cumin, bay leaves, salt, and pepper.
  3. Cook on low for 8–10 hours until the beef is tender.
  4. Shred the beef with forks and mix it back into the sauce.
  5. Heat oil in a skillet; dip tortillas in the broth fat layer and fry until crispy on both sides.
  6. Fill tortillas with shredded beef mixture and serve with cilantro and diced onions.
