  • 1 stick butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 2 & 1/3 cup flour
  • 3 oz cream cheese (softened)
  • 5 oz pumpkin puree
  • 2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl or stand mixer, cream together the softened butter and oil. Add granulated and powdered sugars; mix until smooth.
  3. Incorporate the egg and vanilla extract into the mixture until fully combined.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Using a cookie scoop, form nine equally sized cookie balls on the prepared baking sheet. Flatten each ball gently to about one inch thick.
  6. Bake for about 8–9 minutes until lightly golden around the edges. Cool on the baking sheet before transferring to a wire rack.
