Ingredients

Scale
  • 200 g all-purpose flour
  • 140 g unsalted butter (cold)
  • 113 g unsalted butter (for filling)
  • 56 g bittersweet chocolate
  • 21 g Dutch process cocoa powder
  • 113 g whole milk
  • 200 g granulated sugar
  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ teaspoon kosher salt
  • 24 g white grape juice (optional)
  • 1 cup ice water
  • 1 tsp espresso powder
  • ½ tsp salt

Instructions

  1. Prepare the pie crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly, then add grape juice (optional) and ice water until dough forms. Chill for at least 30 minutes.
  2. Preheat the oven to 350°F (175°C).
  3. Roll out the chilled dough and fit it into a pie dish, trimming excess.
  4. For the filling, melt butter and bittersweet chocolate together in a saucepan over low heat. Stir in cocoa powder, espresso powder, salt, milk, sugars, cornmeal, eggs, and vanilla until smooth.
  5. Pour the filling into the prepared crust and bake for about 90 minutes until set but jiggly in the center. Cool before serving.
