  • ½ cup vegetable oil (neutral-flavored)
  • 1 cup buttermilk (room temperature)
  • 1 cup hot coffee (enhances chocolate flavor)
  • 8 oz semisweet chocolate (melted and cooled)
  • 2 cups heavy whipping cream (cold)
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp unflavored plant-based gelling agent (optional stabilizer)
  • 6 oz bittersweet chocolate (finely chopped)
  • ¾ cup heavy cream (heated)
  • 1 tbsp light corn syrup (for shine)
  • 1 tbsp butter (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a springform pan.
  2. In a mixing bowl, combine sifted flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, vegetable oil, buttermilk, and hot coffee until well combined.
  4. Gradually mix the wet ingredients into the dry ingredients until smooth.
  5. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Melt semisweet chocolate gently and let it cool slightly.
  7. Whip cold heavy cream with powdered sugar until stiff peaks form. Fold in melted chocolate.
  8. Layer cooled cake with mousse and refrigerate for at least 3 hours to set.
  9. For ganache, heat heavy cream and pour over chopped bittersweet chocolate; stir until smooth. Add corn syrup and butter for shine.
  10. Spread ganache on top of the chilled cake before serving.
