  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Remove the turkey from the fridge and let it sit at room temperature for an hour. Place it on a baking sheet.
  2. In a mixing bowl, combine softened butter with sage, thyme, rosemary, and minced garlic. Mix until well blended.
  3. Preheat your oven to 450°F. Adjust the rack to the bottom third.
  4. Prepare the turkey by removing any giblets and patting it dry. Season generously inside and out with salt and pepper. Stuff the cavity with lemon halves and herbs. Rub herb butter all over the turkey.
  5. Place the turkey breast side up on a rack in a roasting pan and reduce oven temperature to 350°F. Roast for approximately 3 hours or until an internal thermometer reads 165°F in the thickest part of the thigh.
  6. Allow the turkey to rest for about 20 minutes before carving.
