Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/2 tsp salt
  • 1/2 cup warm whole milk
  • 1/2 cup warm water
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp red food coloring
  • For the filling: 1/2 cup unsalted butter, softened, 1 cup brown sugar, 2 tbsp ground cinnamon, and a pinch of salt
  • For the cream cheese frosting: 8 oz cream cheese, softened, 1/4 cup unsalted butter, softened, 1 1/2 cups powdered sugar, and vanilla extract

Instructions

  1. Warm milk and water until lukewarm; mix with sugar and yeast. Let sit for about 5 minutes until frothy.
  2. In a large bowl, whisk together flour, cocoa powder, and salt. Add the yeast mixture along with eggs, butter, food coloring, and vanilla extract. Gradually incorporate dry ingredients to form a soft dough.
  3. Knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl and let rise covered in a warm area until doubled in size (about an hour).
  4. Prepare filling by mixing softened butter, brown sugar, cinnamon, and salt in a bowl.
  5. Roll out risen dough into a rectangle (about ¼ inch thick). Spread the filling evenly over dough.
  6. Roll tightly into a log shape; slice into equal pieces (12 rolls).
  7. Place rolls in a greased baking dish; cover and let rise for another 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake for about 25 minutes until golden brown.
  9. For frosting: combine softened cream cheese and butter until smooth; gradually add powdered sugar and vanilla extract.
  10. Ice warm rolls with cream cheese frosting before serving.
