  • 175 g dried apricots, chopped
  • 3 tablespoons apple juice (plus extra for brushing)
  • 175 g butter, softened
  • 175 g light brown sugar
  • 4 large eggs, beaten
  • 175 g plain flour
  • 225 g raisins
  • 225 g currants
  • 225 g cherries, halved
  • 1 tablespoon apricot jam, warmed
  • 500 g marzipan
  • 500 g ready-to-roll fondant
  • 30 ml apple juice

Instructions

  1. Preheat the oven to 160°C (320°F) and prepare a baking tray by greasing and lining it with parchment paper.
  2. Soak chopped dried fruits (apricots, raisins, currants, cherries) in apple juice for 10 minutes.
  3. In a mixing bowl, cream butter and light brown sugar until fluffy. Gradually add beaten eggs and mix well.
  4. Fold in sifted plain flour and soaked fruit mixture until just combined.
  5. Pour batter into the prepared tray and bake for about 1 hour or until a skewer comes out clean.
  6. Allow to cool completely before brushing with warmed apricot jam and covering with marzipan followed by fondant.
