  • 3 medium zucchinis
  • 1 cup crumbled feta cheese
  • ½ cup strained Greek yogurt
  • ½ cup grated Gruyere cheese
  • 1 medium spring onion
  • Zest of ½ lemon
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped parsley
  • ⅓ teaspoon dried oregano

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Wash and dry the zucchinis, then slice them in half lengthwise. Scoop out some flesh to create space for stuffing.
  3. In a mixing bowl, combine the feta cheese, Greek yogurt, Gruyere cheese, chopped spring onion, lemon zest, garlic powder, parsley, olive oil, and oregano. Mix until well combined.
  4. Spoon the filling into each hollowed zucchini half and drizzle olive oil on top.
  5. Bake in the preheated oven for about 45 minutes or until golden brown.
