  • 2 lb Chuck Roast
  • 2 cups Red or Yellow Onion (thinly sliced)
  • 3 Garlic Cloves (minced)
  • 1 tbsp White Grape Juice Vinegar
  • 1/4 cup Tomato Sauce
  • 1 cup Beef Broth
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Fresh Thyme (chopped, or 1/4 tsp dried)
  • 2 tsp Fresh Parsley (chopped)
  • 12 tbsp All-Purpose Flour (or cornstarch)

Instructions

  1. In a small bowl, whisk together tomato sauce, beef broth, minced garlic, thyme, white grape juice vinegar, and Worcestershire sauce.
  2. Trim excess fat from the chuck roast and season evenly with salt and pepper.
  3. In a slow cooker, layer half of the sliced onions at the bottom. Pour half of the sauce over them. Place the chuck roast on top, add remaining onions, and pour remaining sauce over everything.
  4. Cover and cook on high for 4 hours or low for 7 hours until fork-tender.
  5. For gravy, stir cornstarch or flour into leftover sauce until thickened before serving.
