  • 225 g dark chocolate (chopped)
  • 56 g butter
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat the oven to 160ºC (320ºF) for a fan oven or 170ºC (338ºF) for conventional.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Stir in vanilla extract.
  3. In another bowl, whisk eggs with caster and demerara sugars until light and fluffy.
  4. Sift flour, cocoa powder, baking powder, and salt into another bowl; add chocolate chips.
  5. Fold melted chocolate into the egg mixture gently, then carefully incorporate the dry ingredients until just combined.
  6. Scoop batter onto a lined baking tray and bake for 12-14 minutes until set with crackly tops.
  7. Cool on the tray for 10 minutes before transferring to a cooling rack.
