  • 1 lb ground beef (or ½ beef + ½ turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • 8 cloves garlic, minced (divided)
  • 12 oz linguine
  • ¾ cup heavy cream
  • Salt and pepper to taste
  • Olive oil and butter for cooking

Instructions

  1. In a large bowl, mix ground meat, egg, breadcrumbs, Parmesan, parsley, 3 cloves garlic, salt, and pepper until just combined. Form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and brown meatballs on all sides for about 6–8 minutes. Remove from skillet.
  3. In the same skillet over low heat, sauté remaining garlic in butter for 1–2 minutes until fragrant. Add lemon juice and parsley; return meatballs to coat with the sauce.
  4. Cook linguine according to package instructions; reserve pasta water. In a saucepan, melt butter and stir in cream until simmering. Mix in Parmesan; thin with reserved pasta water as needed.
  5. Toss cooked linguine with creamy sauce and serve topped with meatballs.
