Garlic Butter Sweet Potato Stacks are an irresistible side dish that combines the natural sweetness of sweet potatoes with fragrant garlic and rich butter.   • 1.2kg sweet potatoes
  • 6 tbsp unsalted butter, melted
  • 3 large cloves garlic, finely grated
  • 1 tbsp fresh rosemary, finely diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 45g parmesan cheese

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel and slice the sweet potatoes into thin rounds (approximately 3mm).
  3. Brush each muffin tray cup with melted butter. In a mixing bowl, combine remaining melted butter, garlic, rosemary, salt, and pepper.
  4. Toss sweet potato slices in the butter mixture until well coated.
  5. Stack slices in each muffin cup and sprinkle with parmesan cheese.
  6. Cover with foil and bake for 35 minutes; then uncover, increase temperature to 200C/400F, and bake for an additional 15 minutes or until charred and tender.
  7. Serve warm after drizzling any remaining butter from the tin.
