  • 2 lb beef tenderloin
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1/4 cup beef broth
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix garlic, rosemary, thyme, olive oil, lemon juice, salt, and pepper to create the marinade.
  2. Place the beef tenderloin in a zip-top bag or dish, pour the marinade over it, seal or cover, and refrigerate for at least 1 hour (overnight is best).
  3. Preheat oven to 425°F (220°C). Remove the tenderloin from the marinade and place it in a roasting pan. Discard leftover marinade.
  4. Add beef broth around the base of the tenderloin in the pan.
  5. Roast for about 20-25 minutes until desired doneness is reached (aim for medium-rare).
  6. Let rest for 10 minutes before slicing and serving warm with your choice of sides.
