  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt & pepper for seasoning

Instructions

  1. Roast the garlic by slicing off the top, drizzling with olive oil, wrapping in foil, and baking at 180°C (356°F) for 50-60 minutes until soft.
  2. Peel and dice the potatoes; boil in salted water until fork-tender, then drain.
  3. Mash the potatoes with butter and cream, then mix in roasted garlic and Parmesan cheese. Season well.
  4. Pipe into decorative shapes on a baking tray lined with parchment paper.
  5. Drizzle with melted butter and bake at 200°C (400°F) for 15-20 minutes until golden brown.
