  • 2.5 lbs Yukon gold potatoes
  • 2 cups chicken or vegetable broth
  • ½ cup olive oil
  • ½ cup fresh lemon juice

  • 1 tbsp dried oregano

  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the potatoes into thick wedges or cubes.
  3. In a roasting pan, combine the potatoes with chicken broth, olive oil, lemon juice, garlic, oregano, paprika, and salt. Toss well to coat.
  4. Cover the pan with aluminum foil and roast for 40 minutes.
  5. Remove from heat, toss the potatoes in their juices, cover again, and roast for another 25 minutes until fork-tender.
  6. Uncover and roast for an additional 15 minutes to achieve desired browning.
