- 1 lb lean ground beef
- 2 medium zucchinis, diced
- 2 medium sweet potatoes, cubed
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper (any color), diced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Prep your ingredients by washing and chopping the zucchinis, sweet potatoes, onion, garlic, and bell pepper.
